Fresh

Nothing beats a freshly made product. This is especially true with a crab cake. Due to the high water content and thin cell wall structure, the freezing process causes the expanding water to burst the fragile cell wall resulting in leaching and sloghing of the crab meat.

Frozen

Frozen crab cakes are only just so good no matter what the recipe is. In order to save $15 on shipping costs, the competition freezes their crab cakes and ships them for delivery two days later - partially thawed. This makes refreezing them more prone to freezer burn and rancidity. In September when crab meat is plentiful, producers will freeze what they need to hold them until crab meat becomes economical again in
8 - 10 months.

No Filler

Why have it if you don't need it. Filler just lowers the quality of the crab cake. No breading, no flour or roux in our crab cakes.

30%-40% Breading

Using breading makes crab cakes cheaper and is needed to absorb the moisture that shoughs off when you thaw a frozen crab cake.

We Use ALL Jumbo Lump Blue Crab

Why have it if you don't need it. It just lowers the quality of the crab cake. Our crab cakes are made with no breading, no flour or roux.

Crab Meat?

Some use a portion of jumbo lump crab meat so they can 'claim' they are using Jumbo Lump. Some use combinations of snow crab, special crab, claw, and artificial crab.
